Italian Zucchini Soup

Italian zucchini soup is a simple and economical recipe comprised of zucchini, eggs, and a generous dose of Pecorino Romano cheese. It's also known as "Italian egg drop soup."

Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves peeled and minced
  • ½ cup yellow onion peeled and diced
  • 4 zucchini large, skin-on; cut in half lengthwise, then again before cutting into ¼" pieces (Note 1)
  • 1 and ½ teaspoons kosher salt divided (1 teaspoon + ½ teaspoon)
  • Ground black pepper to taste
  • 4 cups low-sodium vegetable broth
  • 1 and ½ cups water
  • 3 large eggs whisked
  • cup grated Pecorino Romano cheese plus more
  • Italian flat-leaf parsley minced

Instructions
 

  • In a large pot, preferably a Dutch oven, heat the olive oil. Add the garlic and onions and sautée until soft and translucent, about 5 minutes.
  • Add the zucchini along with 1 teaspoon kosher salt and the pepper. Saute the zucchini until soft and golden brown, 10 to 20 minutes, stirring often.
  • Transfer the zucchini to a plate and cover it with aluminum foil. It's fine if you scoop out some of the garlic and onion. Pour in the broth, water, and remaining ½ teaspoon kosher salt; bring the liquid to a boil, then reduce to a simmer.
  • Slowly pour the whisked eggs into the pot while constantly stirring with a spoon. The eggs will become ribbon-like, just like with Chinese egg drop soup.
  • Add the zucchini back to the pot along with the cheese and stir.
  • Allow the soup to simmer gently for 1 minute before removing from the heat. Taste for salt, and garnish with the parsley. Top each serving with more Pecorino Romano. Enjoy!

Notes

Note 1: If you can't find large zucchini, use 5 medium or 6 small.
