Why You'll Love This Italian Green Beans Recipe

Easy to prepare and cook: This recipe requires little effort, boils and sautés in minutes, and can be easily doubled.
Fresh and unfussy: These green beans pair well with any main protein, such as fish, poultry, and red meat.
Can be eaten cold or warm: Although this recipe is served cold, you can also eat it warm or at room temperature. There's no wrong way to enjoy them.

This may be an odd disclaimer from someone publishing a green bean recipe, but I was never a big fan of the vegetable. I always found them bland until I discovered the key ingredient that changed my perception: salt.

Well, not just salt. A generous amount of salt. This Italian green beans recipe calls for 2 tablespoons of salt for 12 ounces of green beans. That may seem like a lot, but it's the basis for achieving green beans that don't taste like seasoned rubber bands.

But, wait, there's more! They're also dressed with olive oil, a vampire-vanquishing amount of garlic, a splash of red wine vinegar, and Pecorino/Parmesan cheese.

And you can check the "Variations & Substitutions" box below for more suggestions on how you can gussy up this jolly green giant.

  • Kosher Salt: Be generous here; this brings out the green beans' flavor more than anything else.
  • Garlic: You can't have green beans without garlic, and grating big, fat cloves does wonders for them.
  • Red Wine Vinegar: A splash delivers wonderful acidity, as it does with this zingy vinegar chicken.
  • Pecorino Romano Cheese: For a sharp, salty finish. You can also use Parmigiano Reggiano.

Variations & Substitutions

➢Use frozen green beans instead. You may not have to boil them for as long.
➢Add a pinch of red pepper flakes for some heat.
➢Replace the red wine vinegar with another vinegar or fresh lemon juice. Start with a smaller amount, then increase according to taste.
➢Finish with a sprinkle of pine nuts, almonds, walnuts, or any nuts you like for crunch.
➢ Sauté finely diced shallot along with the garlic.
➢Add some diced tomatoes when cooking the green beans for a more authentic Italian version.
➢Finish with fresh herbs like parsley.
➢Toast some Panko and sprinkle them on top for texture.
➢Add a tiny bit of anchovy to cook with the grated garlic.
➢Take the green beans to another level by adding any olives or sundried tomatoes you may have lying around.
➢Eat warm if you prefer. Toss with the vinegar and cheese right after cooking the green beans.

Pro Tips

Be generous with the salt: Two tablespoons might seem like a lot for just 12 ounces of green beans, but the salt will penetrate them and allow you to use less during seasoning. The salt also helps tenderize the beans more quickly.
Stir the beans often: This will prevent the grated garlic from turning too dark.

Italian Green Beans Recipe FAQs

Should I boil green beans before sautéing?

Yes, boiling green beans helps them soften right through to their interior. But if you prefer a crisper green bean, you can skip the boiling.

How long do you simmer green beans for?

It depends on how much bite you want them to have. Personally, I like them tender with a little bite, so I simmer them for 5-6 minutes. If you like them on the crisper side, boil for 2-3 minutes; if you prefer them very soft, boil for about 10 minutes.

What is the best seasoning for green beans?

Garlic and Parmesan cheese are both excellent seasonings for green beans (and never forget salt and pepper!). Other quality enhancers are olive oil, butter, shallots, breadcrumbs, and lemon juice/zest.

How do I store this Italian green beans recipe?

Refrigerator: Store in an airtight container for up to 3 days. They'll still taste good the next day, but the garlic will mellow a bit.

Ingredients

  • 12 ounces fresh green beans ends cut
  • 2 tablespoons kosher salt (for boiling the green beans) (Note 1)
  • 1 tablespoon extra virgin olive oil
  • 3 large garlic cloves grated
  • ¼ teaspoon kosher salt
  • Ground black pepper
  • ½ tablespoon red wine vinegar
  • ½ tablespoon Pecorino or Parmigiano Reggiano cheese or more

Instructions

  • Place the green beans in a 2-quart pot, add the 2 tablespoons of salt, and fill the pot with enough water to just cover the green beans.
  • Place the pot over high heat; when it reaches a boil, reduce the heat and simmer the beans for 5-6 minutes, uncovered. Drain them and run them under cold water for a few seconds.
  • Heat the olive oil in a pan. Add the grated garlic and cook, stirring nonstop, for 30 seconds. Stir in the boiled green beans along with the ¼ teaspoon salt and some black pepper. Sautée, stirring often, for 3 minutes. Remove from the heat.
  • Transfer the cooked green beans to a bowl and refrigerate for at least one hour. Toss the cold green beans with the vinegar and cheese right before serving. Taste and adjust for seasoning. Cheers!

Notes

Note 1: Two tablespoons of salt may seem like a lot for the amount of green beans, but it really helps flavor them. You'll also be rinsing some of the salt away.
General Notes:
  • Stir the green beans often so the garlic doesn't burn. Grated garlic is more delicate than minced/slice garlic.
  • Definitely taste before serving, so you can tweak if necessary. Add more salt, pepper, vinegar, or cheese.
